There are so many ways to eat an avocado - which is one of the reasons I love them. I know I keep going on about Avocados, and I have (hand-on-heart) probably eaten more than my fair share of these babies but they are so versatile, so nutrient-dense and packed with anti-oxidants, it's easy to see why they are called a superfood!
Short on time in the mornings but need an simple but healthy breakfast idea? Avocado to the rescue. Pair one with a boiled egg on wholegrain bread or toast, and this protein-packed and fibre-rich breakfast will keep you feeling full for hours, and help control cravings.
It's also delightfully easy to make, so if the thought of turning on the stove before heading out in the morning is not appealing, simply boil the eggs the previous evening et voila.
The key to this sandwich is the salt and pepper, which coaxes out the flavours of the bread, avocado and egg and brings it all together.
Ready in less than 5 minutes and at under 400 calories per serving, there's no reason not to indulge!
5-minute avocado and hard-boiled egg on toast
1 50g slice of wholegrain bread (toasted if you prefer)
One-half of an Avocado
1 egg (hard-boiled for 5 minutes)
a pinch of red chilli flakes
Salt and pepper
Place the egg in a pot of cold water and bring to boil. Reduce heat and leave egg to sit in the pot for 5 minutes
While the egg is boiling, toast your wholegrain bread to your desired level of "done-ness"
Add some salt to the avocado and coarsely mash the avocado, so it is lumpy rather than smooth
Spread the coarse mash on the bread/toast and sprinkle the red chilli flakes and black pepper over it
